After the 1820 liberal revolution, many monasteries and convents across Portugal were shut down—including Jerónimos Monastery. In 1837, the owners opened a small shop right next to the monastery, selling these now-famous pastries made with the monk’s secret recipe. The rest, as they say, is (sweet) history. To this day, the recipe remains a closely guarded secret, known only to a few master pastry chefs who prepare the filling in a locked room called the Oficina do Segredo (Secret Workshop). Yes, it’s that exclusive!

Even in December, the line outside was long—but it moved fast. The scent of caramelized sugar and buttery pastry was enough to keep everyone happy while they waited.

I ordered two pastéis, a bica (Portuguese espresso), and found a seat near the window. When the tarts arrived—warm, golden, flaky perfection—I sprinkled a bit of cinnamon and powdered sugar on top and took my first bite. Crispy on the outside, creamy and silky inside. It was love at first crunch. I may have gone back for seconds… and I’m not sorry.
